SUMMERTIME CORN & TOMATO SOUP ~ this soup uses the wonderful summertime trio of corn, pepper & tomato! Tomato, corn, rainbow peppers , potato, onion, garlic, cumin & chili powder All the ingredients go into a pot including the corn cobs which intensifies the sweet corn taste. Then I remove cobs and puree half and the rest is left chunky w/ fresh shucked sweet corn and finished with a splash of cream. YUM!! I can't wait! It is a fav whether you are feeling under the weather or just feel like a good bowl of chicken noodle soup this recipe checks off all the boxes! Chicken breast simmered in a rich chicken stock with fresh grated ginger, lemon zest, lemon juice, garlic, cayenne, onion, celery, leek & carrot. I finish with rice noodles which are gluten free and do not get SOGGY! It is the PERFECT CHICKEN SOUP! GLUTEN FREE/ DAIRY FREE
